beetroot-smoothie

See notes below for how to cook a fresh beet, as fresh beets tend to taste much better than canned!

Serves 1
Prep time: 5 minutes
Cook time: 0 minutes

Ingredients
1 medium beet, cooked and cooled*
Beet greens (optional)
1 medium banana, frozen
½ cup berries, frozen
1 cup coconut water

Directions

Add ingredients to a blender and blend until smooth.

Note: Using frozen fruit will yield a creamier texture, but you can also use fruit at room temperature and then add ice as desired.

*1 cup of canned beets can be substituted for the fresh beet if desired.

To cook a fresh beet, place the beet(s) in a medium saucepan, add enough water to cover, and bring to a boil. Cook on medium heat for 45–60 minutes, or until the skins can be rubbed off with your fingers. To test one, fish it out of the pot with a pair of tongs and run it under cold water until it’s cool enough to handle. Let cool in the refrigerator before using in the smoothie.

Strawberry and Beetroot Workout Smoothie

Beetroots contain a lot of nitrates, which help the body to push itself that little bit further during workouts and exercise, as part of a healthy fitness routine consider starting your workout with a healthy Strawberry and Beetroot smoothie, to help you burn off the pounds that little bit quicker!

Ingredients

  • 4 beetroots that have been cooked and peeled
  • 500ml (around 2 cups) of unsweetened coconut water
  • 500ml (about 2 cups) frozen strawberries
  • 1 lime, freshly squeezed

Preparation Instructions

Stick everything in your blender and blend on high until the consistency is smooth
