We’ve searched high and low, have made countless batches of different bread batters and doughs; tried almost every combination of low carb ingredients; climbed mountains and swam oceans (okay, maybe we didn’t do the last two) to try and bring you to the most perfect, most delicious Banting friendly bread. And guess what? We finally found it! Okay, so we didn’t invent the light bulb or discover a new planet, but making the perfect Banting bread is close enough.

This recipe is full of healthy fats, is easy to make, takes about 5 minutes to throw together and doesn’t require any skill in the kitchen. Is it the definition of perfection? We think so.

• 2 cups almond flour

• 2 Tbsp chia seeds

• 3 Tbsp pumpkin seeds

• 2 Tbsp linseeds

• 1/3 cup raw pecans or walnuts

• 1/2 tsp xanthan gum

• 2 tsp baking powder

• 1/2 tsp pink Himalayan salt

• 170g full-fat Greek yoghurt

• 4 large free-range organic eggs

• 2 tsp sesame seeds to sprinkle

1. Preheat the oven to 180°C and line a bread tin with baking parchment or use a silicone bread mould.

2. Add all the dry ingredients to a medium-sized mixing bowl.

3. Whisk the eggs in a separate bowl and add to the dry ingredients along with the Greek yogurt. Stir until fully combined.

4. Spoon the bread mixture into the prepared baking tin. Bake in the oven for 1 hour.

Gluten found in most breads can lead to inflammation of the digestive tract which creates health issues like ‘leaky gut syndrome’.

Wheat and other grains increase LDL cholesterol levels which over time can cause heart issues.

Breads made using grain and other carbohydrates that lead to spikes in sugar levels can cause the pancreas to secrete larger doses of insulin to bring your sugar levels back down. Insulin is a fat producing hormone.

Most store-bought breads contain sugar.
